Sell future contracts on the CBOT. Pay for storage on the grain until after the first of the year. Buy the contracts back, sell the grain. This will cost you some storage cost but I believe stored grain is considered secured collateral. Remember any margin calls you will get back when you sell the grain.

For record keeping, keep all weight tickets, assembly sheet, settlement sheets and any other document you get. After harvest get a delivery printout, make sure it is right. Make a copy of everything and keep in a file. Keep in mind it's not what you done it's about what you can prove you done.
