As an ex-dairy guy i will say it is for easy clean up and also to stir the feed a couple times a day, the name of the game is maximize intake so anything to get them to eat more is done, sweeping in causes them to walk over and check it out and eat some more. Freshness helps too so feed is cleaned up often and given to other non-milking mouths.
Another thing, proper bunk design requires the feed surface to be 6-10 inches higher than their feet, bunk space is at a premium about 2feet per head and you can't store enough feed in 2 feet in a U shape or even an H bunk to last all day.
