I have thought about the apron only as well for beef cattle. I can't see why it would not work but would like some ideas on making it foolproof. One stumbling block I have with bunks is that I feed syrup to the cows and unless the bunks are really tight together and most likely have the cracks sealed I would get leaking on the ground. A solid apron with a concrete bumper on the fenceline might work better. What is the best width for the apron?
