For several years our go-to picks for freezer beef were HXA heifers that got a little on the "sloppy fat" side. everyone who got it loved it.

But one time I had a white pure bred Holstein steer in the sort pen with the cross when the butcher came to pick one up. (We will often have two for him to choose from, I figure he's seen more critters hanging than I've seen on the hoof) I told him I just couldn't get past how the Holstein looked. Not flabby, just solid from nose to tail. He said he'd choose the Holstein, hands down.
I wondered if anyone would comment on the meat after we delivered. One lady texted me and said, "We're always happy with what you send us, but whatever you did this time, do it again!"
