I raise any breed I can get my hands on, and a Holstein X is probably the best beef you can get your hands on, besides a 2 year old Jersey steer that has been on whole corn and pellet since 350#. Basically the same tells for finish on Holstein genetics as any other breed, just takes longer to get there. Get some fat around the tail and get some size on the brisket then hang it up!
