A typical egg dish for me is five eggs. Edit: these eggs are little smaller. They're probably the equivalent of four store-bought eggs.

I blend the eggs with salt and pepper, and put that in a non-stick skillet on medium heat. That gets covered with a plate, and allowed to completely congeal without scrambling.

In another skillet, I fry about a 1/4 pound of sausage, and chop it up fine. I add a half onion, finely chopped, to the sausage, and continue frying that to take some of the bite out of the onion.

The egg patty is turned out of the skillet onto a plate. It's essentially an omelet, but I don't fold it over. I top this with a small amount of velveeta cheese, the onion and sausage mixture, a splash of ketchup, and a splash of medium salsa.

This meal will easily last me 12 hours before I feel much urge to eat again.
