MB, Canada | mCOOL sounds nice in theory but in practice it's completely impractical. When packers are having to wash down every machine in the building when switching between Canadian and American carcasses, that's a cost that gets passed down to you. When it becomes less profitable for Mexico to send up their ribeyes in exchange for flank steaks, that loss in profitability and efficiency gets passed down as well. The one thing the packers have figured out is efficiency--they just haven't had to share the profits from that efficiency yet because of handshake deals with feedlots. | |
