Wonder if you boys would charge a little closer to what they are worth commercially, you could bring a butcher shop back to every small town in america and sell them all private, take down the pack.
$2.50 hanging is about $1.60 live which is about where a prime on the grid is right now. Maybe shoot for $1.80 live and add $250/head to your pocket for the trouble.
