Latimer, Iowa (north central) | We just received a whole beef which we then resell at our grocery store. We purchase from a local family that does alot of freezer beef. Has to be federally inspected for resale. Price was about 6.00 per lb delivered to us. This is a discount for them but we take a whole on a semi-regular basis. We mark most grocery products up 15-20% over our cost of purchase to sell. Obviously steaks have a much higher markup but the ratio of steak to hamburger is poor from a retail side. too much hamburger. Selling the hamburger for 7.50 a pound. Our Tyson ground chuck costs us 4.99 a lb and we sell for 5.99.
I know what any of us would rather buy and eat! Meat from a single calf from a local farmer and butcher or whatever Tyson has mixed up. Cost difference is negligible when think of what the two products are and how they are handled.
