We don't like to get in the middle of the customer/processor relationship.
Avoids miscommunication on cut lists (any problem there is between the customer and the processor, not us).
And it keeps the inspection requirement clearly on the processor and not on us.
Some around here have started selling retail cuts, so they are apparently inspected on the farm/store level.
