Middlesex County, Ontario | There's lots of info out there about whole wheat bread. To start, a lot of "whole wheat" isn't even the whole of the wheat, its just white flour with some bran added back in. In North America we grow wheat varieties that are easy to mill, but they don't taste very good so we add a ton of sugar to the bread. Super easy to inexpensively process everything. In Europe they grow varieties that taste better (but don't mill as easily). They don't need to add sugar, whole wheat means the whole of the wheat, their bread tastes great, and is way healthier.
