I would put the plastic down. You can't go back later and get a do-over. If you may ever want to heat it, I would put insulation down as well. A couple hundred dollars now could look awful cheap later. The vapor barrier really helps prevent sweating.

I probably have enough ends and pieces of silage bag to do it, if you need an excuse to go for a ride.
