First, for deep-fried, use enough oil. Plenty. Otherwise, the temperature will drop like a stone when you put in the fish. Second, have it nice and hot -- at least 350-375. Use an oil with a high smoke point, like peanut oil. Fish needs to be fried hot and fast. I prefer a light coating of corn meal and flour, 50/50.
