We deep fry catfish. We just put cornmeal with salt and pepper on it as the batter, or buy batter from the store. The previous poster is right about the equal size pieces. We just drop it in the oil and it sinks. When it floats, it is done. Hope that helps a little. That is the only way I know how to cook fish.
