If it were me, I'd definitely try to get something that has a variable speed cleaning fan. Here in South Africa you can also get different chaffer/sieve kits for fine seeds like alfalfa and various other kinds of stuff. Those might be handy if you want to harvest something for seed purposes. How about a really small rotary like a 1420, or is that bigger than you want? I think they're gentler on the seed than most conventionals. If it were economically viable, we'd keep one around for this exact purpose. Keep parts availability in mind too. We harvest our seed with the normal combines and just have it cleaned at the plant, but I don't know if that's an option for you. As I said, this sounds like a cool idea, but here it wouldn't be viable.
