We've been using poultry litter for 30+ years. The value of litter as a supplier of nutrients plus the OM it contributes far exceeds the increase in weed pressure it may present. Do soil test every 2 years and also have an analysis run on the litter. The biggest problem with litter is getting the P too high, not weeds.
