We've had a Great Pyrennes for 6 years now.  You can't train them, they just do what they are bred to do.  As other said, they guard the area, and ours goes over to the neighbors and guards there sheep as well.  I'd get a pup, I think an old GP would be even harder to control.  As to mixing two dogs, then they spend half the time fighting over the food.
