I talked today with a friend who has a Guernsey steer (hanging weight of 600 lb.) at the butcher's now. He said he will price it at $2.65 lb. ( includes processing) ( Processing is 48 cents per lb., plus $30.00 killing fee, for a total processing of 53 cents/lb.). Processing plant owner has cattle ( beef type ) of his own and said he is selling for $2.80 per lb. hanging weight. So , my friend's Guernsey at $2.65 less .53 gives $2.12 per lb. hanging - a good price for a dairy type animal. Processing owners' figures to be $2.27 per lb. hanging (before processing).
