I kept up with the hanging wt. vs. live wt on the last several Jersey steers we have had processed. They are pretty consistant at between 63 and 64 percent. ( I would think that is fairly consistant, some were lighter, maybe 950 up to 1300+). I would have thought there would be more variation within the range of size, but I haven't seen it. I just put a steer in with the milking herd for 60 to 120 days when I hear something about needing beef. Not all are what I would consider to be "finished", but all seem to be very tender. There is research out there that claim that Jerseys will finish on grass, I haven't sent one during grazing season, so I can't testify to that. Jared in TN
