How many people are you feeding , 500 pig will yeild some were around 300 pounds of meat . You don't want it sitting around for a year . Six months is best . Do you have freazer space for all that . Fat is fat , lard is rendered down fat . If that old sow is decent shape , got a little spring in her ribs and some cover she mite not be to bad . If she just weaned a litter and is all slab sided probably not going to be good except for sausage . Like was posted before if you have a place to feed one for a month you could have some fair eating .


That hog would make quite a few christmas sausages as gifts.(: Plenty of lard too....
Cheap meat.....One could cut out only the hams and forget the rest and stilll be money ahead on the deal if you do it yourself....
