Subject: RE: Cooking ( smoking ) meat

It's not a true smoker like you are asking about but I have been doing most of my cooking on a Charbroil Big Easy "Smoker, Roaster and Grill" which does a decent job of smoking but at higher temps than a traditional smoker.  There are some people modifying the SRG (Smoker, Roaster and Grill) to smoke at 225-250° but so far I haven't seen the need.  The SRG is a gas cooker that cooks like an infared tube heater in a shop turned inside out so that the heat surrounds the meat but since it's infared heat it heats the meat without heating the air around it so it doesn't dry the meat out.  The meat out of the SRG is very juicy and tender, the turkey I did in it for Thanksgiving was the best turkey I've ever had.
