North West IA/western AZ | 1 cup sugar
2Tbs cornstarch
1 cup water
2Tbs peach gelatin powder
1 med. fresh peach, peeled and finely chopped
4 boneless skinless chicken breast halves
In a saucepan, combine sugar, cornstarch and water until smooth. Bring to a boil over medium heat; cook and stir for 2 min. Remove from heat. Stir in gelatin and peach; mix well. Setaside one cup for serving. Grill chicken, uncovered, over medium heat for 3 min. on each side. Baste with some of the remaining peach sauce. Continue grilling for 6-8 min. or until meat juices run clear, basting and turning several times. Serve with the reserved peach sauce.
Yeild: 4 servings
We have fixed this recipe several times, and enjoyed each.
