How much shrink is considered normal from a hanging weight to the final total cut weight? This was a small beef with a side hanging at 276 lbs. it hung 3 weeks and asked that they not trim any more fat off than necessary. Total package weight was 180 lbs or about 30% shrink. Steaks are all bone in and I received soup bones in that weight.
