Wife owns a commercial winery here in mn. The answer to the loaded question is “it depends”. Heavy red wines age more gracefully. Younger, fruitier wines less so. Simple whites here are designed to be consumed 0-12 months. Simple reds 0-18 months and medium reds 6-18 months. We design a few reds for aging but we still feel 18-36 months is optimum.

#2. When wine ages it typically will lose its “fruit” characteristics and Lean toward earthy/nutty tones. 90% of wine drinkers don’t prefer that profile.

Long story short, unless it’s a “big” white wine consume it early. Sweet reds the same. Very bold dry reds can age gracefully in a bottle but most people will wil not prefer it. Had a $1500 bottle of wine aged for 15 years at a party a while back and to be honest, didn’t care for it. Expensive aged wine is more for talking about than anything.
