One thing I have made mistakes with is with a larger brisket ( maybe different with smaller) is to not let it come down in temp a bit unwrapped before wrapping and putting in cooler. At least if you take it all the way to probe tender. If wrapped right away at max temp it will keep cooking for a while with all that thermal mass and might dry it out.
