My favorite apple is gravenstein but they don't keep well, very short season. We can them as slices for oatmeal topped cobbler and on pancakes. I have to watch what kind of apple I eat fresh as it causes an over production of saliva, feels like I am going to drown and I feel nauseous if I eat more than 1/2 an apple, some just 1 slice. Gravenstein are tart, then sweet for about a week on the tree (longer if kept cold) and then go mushy. Great cider apple but any cider is best made from a mix of varieties. Early apple, mid July. Very tender flesh, thin skin....James
