Honeycrisp if just eating the apple plain.

However, my wife and kids make a kind of sweet, soft dip using (I think) cream cheese, brown sugar and perhaps a dash of peanut butter that is awesome with a tart apple like a Granny Smith. The sweet and tart go together so well. The hardest part is getting it to come out even. Often times, I need to slice a second apple so that the apple and the dip on my plate are gone at the same time ;^)
