Honeycrisp is fairly good fresh, and stays about the same over time. Gala and Pink Lady, if I recall correctly, are roughly similar. Fresh eating there's not much that can beat a McIntosh, in my opinion, but once they've cooled they get a soft layer just under a tough skin, and the flavor is good but not the texture.
