I too think they may use ground chuck or a better grade of meat for the hamburger steak. The web has recipes for hamburger steak but some sound like small fried meat loafs.

In some places, you might run across a Salisbury Steak with is another version of hamburger steak but with more things added to the meat.

"What is the Difference Between Salisbury Steak and Hamburger Steak? A Salisbury steak contains more fillers such as breadcrumbs, sauces, onions, and an egg whereas a hamburger steak only contains salt and pepper.
