When we butcher with family, we usually use the tractor loader to hang it and then proceed to skin and then gut it. We then will hang it over night in a building if it is cold enough or if too cold or too warm it will have to go to someones walk in cooler. I guess some guys do cut them up right away to fit in a small freezer if needed.
