Day Co. SD | Right or wrong. I skin them on their backs on a table with a utility knife. Do one half then roll them on the side and skin the other half.
Then hang them by the rear hocks to gut them. Cut them from the inside with a sawzall to split them. Each half cut into 3rds to fit in the chest freezer.
