That also means new genetics from outside the breed come in regularly too.
Makes for a BETTER total breed.

They pretty much specify Jersey or Jersey cross in the milk lines that supply that plant.

Reason is higher fat content of the milk, thus better cheese yields etc.

There's quite few purebred Jersey cows now that weigh in the 10 to 11 range.
