how long should we dry lumber before putting insulation back in a wall?

Sounds like a compromise to me, either they wanted to do it fast and easy or you didn't want to clean out inside. In the REAL world where it RAINS, I wouldn't even think of doing it from the outside. If from the inside, you could ventilate the best you could, and wait as long as you wanted. From the outside, all you have is until before the next rain. If from the inside, just wait plenty long and make sure everything is real dry--why worry about what day it is actually just barely dry enough?

Maybe I understood it all wrong, and if so then my comments aren't valid.

Sorry you have to deal with it at all, sounds like no fun.
