Lots of good ideas above.  Make a small stud wall and practice crawling through it with SCBA.  Smoke a confined space and try to find a hidden object.  Get junk cars and practice with jaws of life.  Definitely draft from a folding tank.  Run the pump out of water and get it primed out of draft tank.  As Jalopy said, get everyone used to running truck, driving, pumping, etc.  Fires happen at times when the guys that are best at running trucks may not be there, be prepared.

Edit to add, think of things that went wrong on previous fires, talk about it and practice things to improve so that it don't happen again.
