Subject: Cowpeas for seed

So, how do you grow cowpeas for seed.  I planted some in late may and they produced well, but the pods were in multiple stages of development when the freeze nailed them.  In august there were pods that were dried up and seed ready for harvest with oncoming pods, now at the point when they froze there are pods with hard seed that would shell nicely and pods that are like a greenbean, nowhere close to being mature for seed harvest.  Is there a way to get the plant to produce pods of equal maturity on the entire plant, it seems as the plant keep growing longer it added more pods.  How do you go about harvesting these things?
