It is not uncommon for KW water temp sending units to read 15-18 degree F "Too Low" on the dash gauge. Almost always, it is the sending units fault located up at the thermostat housing. I mention this because the engine temp maybe hotter than you think, if you only go by the dash gauge. Might be time for a new thermostat, and clean radiator,air to air charge cooler core , a/c condensor(as previously mentioned). The engine's ECM (computer) may be reading the correct coolant temperature(using its own sensor) and be turning on the warning light. NOTE: Under a really hard pull; the rule of thumb is that oil temp is roughly 20-40 degrees F hotter than coolant temp. So 200 F coolant would have roughly 230 F oil temp (under hard pull or on a dyno)
