I have seen quotes in the .38-.42 per pound of hanging carcass weight for custom processing. If you take in a 1200 lb cow or steer that hangs at 62% of hoof weight that would be 744 lb hanging weight x say 40 cents = 297.60 or right about $300 to process. I don't think it mattered what size or cuts you asked for except if there was something special such as sausage etc. There was an additional charge for slaughter and they keep the hide etc.
