I figured it was drier because you did it by hand and absorbed moisture through your hands or the kernels were more exposed to air and had more "effective drying" time than when run through the machine and piled in the hopper, truck or wagon.

But I like Bob's theory better, getting the molecules all excited, thus affecting the respiration and evaportation....
