Subject: Why hand shelling is dryer than the elevator

Why is it that when you hand shell a sample you always add a couple points? I have always done it, just don't know why. Does hand shelling not bring out the moisture as much as getting beat through a machine? What is the number of points you add to corn normally? How about beans?
