My wife and I bought a Virginia ham on our vacation this last summer, back in July.
My impression of these hams has always been that they keep indefinitely? Anyways, we were planning on serving it at an upcoming party (recipes welcome!) in a few weeks, February. We have kept in our basement, unrefrigerated.
The ham came in a cloth sack, with a lot of printed directions. It says that surface mold is normal. It further says to not keep the ham longer than two months.
Well, the ham has mold on it, and my wife is whigged out. I say cook the darn thing.
