If your in it for the longterm, buy them. Make out a lease for the pasture and crop fodder, simplifies everything and there's no finger pointing if a critter croaks or diesese shows up. If you own them there's less paper work, you may want to sell off a few freezer beefs here or there and uncle sammy doesn't have to know everything.
