It seemed a natural extension of my homebrewing hobby, and I have access to good milk, so I've thought about it. Haven't tried it yet...I'd like to do hard aged cheeses the most, but the right temp/humidity combination for aging is hard to do without refrigeration...and my refrigeration is dedicated to beer. :)
