I think the springing heifer market is less volatile than fed steers.

My first choice would be custom raising heifers for someone, you get paid and don't have to worry about purchase or sale price.

There are plenty of dairymen looking to have heifers custom raised "here", some of the heifer growers out there are unprofessional to say the least. If you would do a really good job, I doubt if you would have a problem finding clients.

The key is to do a better job than anyone else-it's not hard to raise heifers, but you do have to be disciplined enough to do everything every day. Shouldn't be too hard for a guy who is used to having to milk and tend dairy cows 2x every day.
