HOlstein steers can be finished or raised to slaughter if kept fairly confined or they will walk their weight off quickly. We raised thousands of holsteins but they never graded or grossed as much as a beef or beef cross did. If possible, see if there are a few beefers you can match up with your remaining herd and feed them up. If you can sell some quarterly or get someone whom wants to buy your feeders you can do alright. The time is good right now for beef.
