Consider removing one of the rings from the bin if possible to get it at a manageable height.
With only 2 tons per week being fed you can probably get by with a small, inexpensive used mill. Grind often to keep their feed fresh.
Speaking from experience, those long extensions get pretty hard to crank up with all that weight out there and there’s a lot of stress around the auger’s elbows.
