That’s almost as bad as here. Last guy I was using was $1.35 plus $150 in fees. On a 700lb carcass we were pushing $1.60 and his yields kept going down. When we fell below 40% yields on some big carcasses we parted ways.
Out new rule of thumb is if the locker plant sells retail cuts we don’t use them….
