My grandparents were Pennsylvania Dutch and they made potato sausage which is about the same as boudin except they used potatoes instead of rice . Every scrap of meat you could find that was left over from butchering , any vegetables that needed used up , plus some potatoes , cook it all up and then stuff in a natural casing
