Lived in Lafayette many years as well has Houston.  Best Boudin and stuffed pork chops is "The Best Stop" in Scott, LA.  Just a little west of Lafayette just off I10.  Locals will tell that as well.  Good stuff.  Great as an appetizer with a barbecue.  Ca c’est bon (good stuff).
