It's a nasty, LOUD, dirty process. Not sure it's any more economical than an oxy or mapp torch for small welds here and there, but if you're gouging a lot it's probably your best option. And yes, in the right hands it's much more precise than a torch.
The pressures we run at my day job (rolled and welded pipe mill) vary depending on the rod diameter you're using. I'm not sure how small of a rod you can get or what you need, but here's what we use- IIRC, .250" rods are around 120psi, .375" is around 150psi, and .500" rods are around 180psi. You don't necessarily NEED to run that high, but in our factory we like to "get with it".....
If you need it, I think I have a manual around the office somewhere that lists reccomended pressures for each rod.
