Sounds like you drilled multiple varieties. Pubescence color being different is key. Shell some out of both colors and look at the hila color as well.

I'm not aware of any environmental condition that will cause a color change.

Mixing up a box or some bags is pretty common, probably an honest mistake. It is possible that the beans you intended to buy are the lower yielding ones ......
